Whole Wheat Vegan Pancakes Recipe

Recently my family and I have started a journey to living a healthier lifestyle and have adopted a vegan/plant based diet. This required us to do a lot of searching for new, healthy recipes that suited our new needs. A big challenge was breakfast, and finding things that everyone could enjoy.

This pancake recipe has quickly became a household favorite and one of the most requested dishes in our household. We really enjoy them, and I think you will too!

This recipe yields about 4 servings

What you will need:

1 cup whole wheat pastry flour

1 tablespoon Sucanat

2 teaspoons baking powder

1/8 teaspoon sea salt

1 cup non-dairy milk ( we use cashew milk )

2 tablespoons unsweetened applesauce

Whole Wheat Vegan Pancakes Recipe

Ingredients

  • This recipe yields about 4 servings
  • What you will need:
  • 1 cup whole wheat pastry flour
  • 1 tablespoon Sucanat
  • 2 teaspoons baking powder
  • 1/8 teaspoon sea salt
  • 1 cup non-dairy milk ( we use cashew milk )
  • 2 tablespoons unsweetened applesauce

Instructions

  1. Mix all of your dry type ingredients together.
  2. Using another bowl, whisk together your applesauce and milk
  3. Combine and mix together all ingredients. Be careful not to over mix, some clumps are ok
  4. Heat your non-stick griddle to medium and drop around a 1/4 cup batter onto it ---this can vary depending on the size of pancakes you prefer.
  5. Cook your pancakes until bubbles start to appear in the middle and then flip, then continue to cook your pancake for 2-3 mins on the other side.
  6. Repeat and Enjoy! We really love using blueberry sauce on our pancakes, though there are a wide variety of options!
