Organic Oat Blueberry Muffins, A Quick Recipe!

Today I decided to test out a new review silicone muffin pan and with the things I had on hand and settled on Oat Blueberry Muffins! This is the recipe that I used, however, I did substitute a few things to make it a bit healthier, like using less sugar.

Notes: For this recipe to be organic, obviously the ingredients YOU add must be just that, organic. I also used cashew milk instead of regular milk as well.

These muffins were a major hit, so I thought I would share the recipe here with you! 🙂 ENJOY!


1 c quick-cooking oats
1 1/4 c all purpose flour
1/2 c sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1-4 tsp salt
1 egg
1 c milk
1/3 c vegetable oil
1 c fresh blueberries


Mix dry ingredients.
Add egg, milk and oil
Fold in berries
Bake 18-22 minutes or until golden brown
Makes 12 muffins

Serving Size: Makes 12 muffins
